Yàn’s Shun De Yu Sheng strives to stand out from all the other versions of yu sheng on offer and you could say it’s mission accomplished. The vermicelli is fried with colourful capsicum. Then slices of yellowtail fish are added along with pickled ginger, peanuts and deep-fried youtiao before a sprinkling of gold flakes makes the dish oh-so Instagram worthy. But that’s just the tip of the culinary iceberg.
There are more festive dishes to consider from Yàn’s Chinese New Year menu, such as the Double-Boiled Chicken Soup with Sea Whelk, which is brewed for eight hours, whole chicken and pork served three ways—the highlight of which is the oven-baked fillet with lemongrass.
