The Iconic Shangri-La Singapore Now Serves Sublime Japanese Cuisine

Up on the 24th floor of the wing, you’ll find Head Chef Shigeo Akiba and his award-winning disciples delivering authentic Japanese cuisine. For someone who prepared the wedding banquet of Japan’s Prince Akishinomiya and Princess Kiko, and later their crowning ceremony, we do mean “authentic” in every sense of the word. With prices ranging from SGD40 to SGD200, the dishes are imported as fresh as a meticulous Japanese chef would allow it. The special sauce used for some of the dishes comes in the form of superior dashi stock.
With ingredients sourced from the sea off northern Hokkaido and Marufuji—a producer from Kyushu that selects one out of 10,000 pieces to be fermented and aged—we are talking about some amazing umami feel. Signature dishes such as the Pan-Fried Tuna Head (SGD60) and the Japanese Saga Wagyu Beef Sirloin A4 (SGD70) are best indulged. Although the SGD185 omakase lunch is a royal experience on its own, you must not miss the sashimi and sushi selection over some fine sake in the evening. Majestic.
