Let the underground barís new menu take you down memory lane.

There’s the age old adage that bars are where you go to have a good time, but lay waste to your system in the process. That is not what will happen in Operation Dagger. It sounds dangerous, and looks the part too, but its undisputed standing in both Asia 50 Best Bars and World’s 50 Best Bars lists attests to the quality of what you will consume.
Here’s what we know so far. The bar champions sustainable practices, unorthodox by industry standards, but somehow made sleek under Creative Director Luke Whearty’s direction. It is also a visibly unique take on speakeasy bars, so you can expect imaginative blends that match. Bold ingredients are injected into deliberate creations to convey an exclusive experience from Whearty to you. This time, the sensory narrative imbued into the new seasonal menu follows Whearty’s cherished memories.
There is The Sea Cucumber (you’d have to try it for yourself), and No. 17/18 Cyprus Hill, a refreshing fruit and floral cocktail inspired by Whearty’s mother’s birth place. What caught our attention was the Moscow Mule, it’s name bravely adopted with no taste semblance to the classic. The rendition is interestingly influenced by bread. Or rye, to be exact, and its fermentation– traditional Slavic beverage Kvass.
If you are inclined to the sweet, Caramelo Koala reminisces the mixologist’s favourite chocolate bar back home in Australia, blending cacao, eucalyptus and vinegar caramel filled olive. For the adventurous, Oyster Ice Cream is one reserved for you. The liquid form of the original dessert concocted of oyster leaf, fino sherry and citrus cream, it is topped off with house-distilled matcha and matcha sherbert.
The experimental techniques don’t stop there. Indulgent snacks are available to complement the array. Yield to mash potato pan fried with brown butter and truffle oil, or a salmon mix seasoned with paprika and orange sorbet. We recommend satiating yourself with these enduring flavours, because what better way to create new memories?
