This Is Why Airline Food Sucks
Blame the plane, not the chef.

We never get on a plane expecting to have a satisfying meal. Everyone—especially bad comedians—know that airline food sucks. But why? When airports are such a shitty place, why can't we get a damn good in-flight meal? The BBC interviewed several airline experts to find out, and it turns out the answer is more complicated than you'd think.
"It's actually very hard to cook at those altitudes," John Hansman, who directs the International Center for Air Transportation at the Massachusetts Institute of Technology, told BBC. "They generally are just doing reheating."
Yep. Your food has been reheated, and that's why it tastes all...chewy. The meat is also pre-cut so that you don't need a knife (y'know, because knives are generally frowned upon on airplanes for some reason). "Airlines have discovered that, if you also pre-cut the meat, you practically don't need a knife," Guillaume de Syon, an Albright College professor who studies aviation, told BBC. "Because it's been so overcooked, you can cut it with a fork."
In addition, there's just not enough space or time for your average passenger plane that has 300-plus passengers to provide an above-average meal. Instead, airlines focus on entertainment, according to de Syon:
"What are TV dinners about after all? There's a very definite shift in trying to find a way to keep the passengers busy. Until the '90s, you only had a choice of one movie. That was it. What they found after the '90s was that if you had more to choose from, then passengers are happier and more patient."
There you have it. Won't make the food taste any better, but hey, the more ya know.
